Last Monday I was invited by @visit_israel to attend a Israeli vegetarian cooking workshop @estherscookery. It was so inspiring to hear Esther, the owner of this cozy cooking studio, sharing her stories and love for this exciting and divers cuisine. We got to cook her tasty recipes, learned a lot and had loads of fun. I realized how much I have missed these kind of events and I am happy they are possible again. After all that hard work came the fun part: tasting all the amazing dishes. They were packed with flavor and made with so much love. I realize we just got to scratch the surface of what this cuisine has to offer. That’s why I have added going to Tel Aviv and Jerusalem on my wishlist. I can’t wait to really dive into their colorful food culture and to experience and taste more 😍😍😍

@chun_ams is a stylish and cute little sando and bubble tea spot in the Nine Streets of Amsterdam. Their sandos are so super delicious. I love that they toast the milk bread before they top it. And the toppings are so good. We had:

Can’t believe how tasty these buns turned out. S Can’t believe how tasty these buns turned out. So super fluffy with a tasty filling and a yummy broth inside. And I love how crunchy the bottom was. 

Here’s the recipe for 8 baos (see also link in bio):
 
Ingredients for the filling
-175ml chicken stock
-0.5 tbsp agar agar powder
-125 grams of pork mince
-1 spring onion (finely chopped)
-2  shiitake (finely diced)
-0.5 garlic clove (finely chopped)
-1 cm piece of ginger (peeled and finely chopped)
-Pinch of ground white pepper
-0.5 tsp sesame oil
-Pinch of salt
-0.5 tbsp oyster sauce
-0.5 tbsp soy sauce
-0.5 tsp Shaoxing rice wine
 
Ingredients for the dough
-250 grams of all-purpose flour
-0.5 tbsp of neutral oil
-Pinch of salt
-3.5 grams of instant dried yeast
-7 grams of baking powder
-20 grams of sugar
-150 ml of water
 
How to make the buns:
1.Make the jelly by mixing the stock and agar agar in a pan. Leave for 15 min, bring to a boil (don’t stir), lower the heat and boil for a few minutes. Stir well, leave to cool in the fridge until it sets (about 1 hour).
2.Mix the rest of the ingredients for the filling. Chill until you need it.
3.Check if the jelly is firm. If so, dice it and mix it through the filling.
4.Put all the dry ingredients in a stand mixer. Use the dough hook to mix. First slowly, add the water and oil and turn up the speed. Mix for 2 min, roll the dough into a ball and grease the dough with some oil. Cover and prove for 1,5 hour.
5.When the dough has doubled in size, shape into a long cylinder. Use a bench scrapper to cut it into 8 pieces and roll into 8 balls. Flatten into 3mm discs. 
6.Flatten your left hand and put a dough disc on it, spoon 1 heaped tsp of filling in the middle of the dough disc. Use your right hand to grab and pinch the edges of the dough together. Make pleads all around the bun until there’s no more dough left. Shape the rest of the dough into buns. Cover with and rest for 30 min.
7.Heat 5 tbsp of neutral oil in a frying pan. When the oil is hot lower 4 buns into it. Fry for 3 minutes and add 5 tbsp of water and cover. Steam for 6 minutes.
8.Serve with black vinegar

@_masmais is the only taqueria in Amsterdam where they make fresh tortillas using fresh corn. So, of course I had to go and see for myself. 

I spent one after noon with co-owner Mike van Kruchten. He showed me how they use a real Mexican molino to grind the boiled corn. After grinding they knead the dough and use the Mexican tortilla machine to shape the masa into little pancakes. Like a real tortilla king he taught me how to properly toast the pancakes on the plancha so they puff up. In Mexico this is a sign for girls that they are ready to get married. And of course I got to try it too and of course I messed up 😂 

No teaching without tasting! They built a few tasty tacos out of the fresh tortillas for us to munch. And they were so so tasty!! I love how exciting their tacos taste 🤩

Meet these cute maritozzi by @bakedbysalvo. It’ Meet these cute maritozzi by @bakedbysalvo.

It’s a deliciously soft brioche-style bun filled with panna (fresh whipped cream). Romans love it and in Rome they eat it as breakfast. I’ve actually never had them nor seem them but I am so happy I tried them. ‘caus they are so super tasty. I just finished one and was craving another one right after the first.

NYC, the city that always eats. I love all the exc NYC, the city that always eats. I love all the exciting food the city has to offer. I had time for a few eats and man where they good. Here’s where I ate (tap on the pics for tags):

🍩 Mochi Mochi Donut in K-Town: an insanely chewy mochi donut with a matcha glaze.
🍜Ivan Ramen: my fave mazemen (triple pork triple garlic) and tonkotsu ramen. The sauce is just so tasty and satisfying. I fell in love with it the first time I ate it back in 2017. And it’s still as mind blowing as I remember. I just love the texture and chewiness of the noodz! Noodles, of course by @sunnoodles 
🍜Nakamura: shrimp yuzu wonton also with noodles by @sunnoodles. This was such a delicate bowl of noodz. Loved the depth of the broth and the gorgeous thin noodles. 
🐔Double Chicken Please: shiitake mushroom poppers. The poppers where so fluffy and that shallot marmalade had that to die for sweetness and tang. We also had the stuffed chicken wings. The sticky rice was just perfectly prepared and the cuttlefish aioli…I could eat a bucket of that! We topped it of with a chicken sandwich. I had the hot honey one. The fried chicken was so extremely crunchy and I loved the combo with the Thai basil and hot honey.
🍳Golden Diner: breakfast for champs. This cool and vibrant diner in Chinatown is the brainchild of Momofuku Ko’s former chef Samuel Yoo. They recommended the Chinatown Egg & Cheese sando and the sandwich did not disappoint. Silky smooth and fluffy egg, super crunchy bacon and that hash brown patty. What a texture!!
🍩Dominique Ansel Bakery: the home of the cronut. Where the donut meets the croissant. The flavor: orange marmalade and caramel flan ganache. Tasty until the last bite. 
🍪 Levain Bakery: I am not a cookie person. At least, that’s what I thought. This dark chocolate peanut butter chip cookie converted me into a cookie freak. What a chew, what a taste. I need more if this in my life.

I wish I had more time to eat my way through NYC. But I will ago back soon! What’s your fave NYC place to eat?

I am posting this with mixed feelings since rumor has it we are facing new restrictions for restaurants. Tonight our prime minister will announce new measures and this might mean that restaurants will have to close their doors at 5 pm. That would be terrible terrible news. If that’s the case, we can of course support our favorite food spots by going out for lunch or for dunch (an early dinner at lunch time). Consider these food pics as an inspiration where you can go and grab a bite these coming weeks.

1.  Chaussons aux pommes. This is a seriously pretty dessert. It’s an apple pie filled with caramelized apple compote at @vanderveen_restaurant.
2.  Broth made from onions and toasted rye. It’s topped with pickled and roasted onions, smoked bacon oil and preserved rose of last year @vanderveen_restaurant.
3.  Nothing beats homemade bread. And these Hokkaido bread (Japanese milk bread) with Summer truffle butter and a potato bun with salmon eggs where just absolutely to die for. We also had cod poached in a butter bath with herbs, crispy potatoes and a sauce made from fermented garlic @vanderveen_restaurant.
4.  The perfect egg with almonds at Michelin restaurant @lerestaurant_.
5.  Raw seabass with colorful raw cauliflower and mousse of cauliflower @lerestaurant_.
6.  Pretty appetizers @krommewatergang. Red and yellow curry crisps, ginger and lemon shot and a variation of seaweed.
7.  Langoustine so fresh it might swim away at two Michelin starred restaurant @krommewatergang.
8.  Crab shell filled with crab @krommewatergang.
9.  Quesadillas with oyster mushrooms and a homemade salsa roja at funky taqueria and bar @_masmais.
10.  Tostada tinga de pollo (pulled chicken in a creamy sauce), taco de calabaza (pumpkin with goat’s cheese and salsa macha) and taco pork carnitas @_masmais.

I wish I could tell you which ramen in London is t I wish I could tell you which ramen in London is the best. For that I would have to try all the ramen shops multiple time. Sorry, I need to do that some other time 😅 What I can tell you is that these two ramen shops are very legit:
🍜@bonedaddies. They have several locations throughout the city. I went to the one in Soho and ordered the pork pork chilli: charred pork belly, pork mince, chilli, chilli oil, spring onions, bamboo, bean sprouts, Clarence Court egg. The ramen wasn’t very spicy, so it’s also ok if you prefer less spicy. Want more spicy 🔥🔥🔥? Just spice it up with the chilli oil. The ramen was very tasty. I loved the depth of the broth, the tasty toppings and the chewy noodles.
🍜 @nanbanlondon: you can find this ramen food stands in the @sevendialsmkt. A very cool food court right in the heart of London. Head chef Francy Ibarra recommended the Tokyo Modern Chicken Ramen. It’s a ramen with a rich roast chicken broth, chicken thighs, bamboo shoots, shiitake, spring onions, bean sprouts, nori oil, fried shallots, katsuobushi and tasty noodz from @sunnoodles. The broth was so rich and creamy. Loved it! Also loved the fried shallots. It gave the dish an extra dimension.

They’ve officially opened their doors yesterday (congrats!!!) but I was lucky enough to get a taste of their menu two weeks ago. This place looks so pretty. Elegant, romantic, fancy and cozy. There’s a gigantic bar decorated with white marble and wood and it just makes you want to stop right there and spend your entire evening sipping wine, Champagne and nibbling on some of their awesome culinary creations. I love how the staff gives you this amazing warm welcome and how everyone is just so excited to tell you all about their food and the wines they serve. The food is insanely good. And you can just order as you go along. No fixed courses, just order what you feel like. Chef and owner @rickswinkels described this place to me as a place he would love to eat everyday himself when I spoke to him a few weeks ago. And he managed to pull that off. This could easily be the place I would find myself again and again. Go and try for yourself. If you go, tag me if you share anything so I know you went.

If you want to experience all the good things our tiny country has to offer you should def spend an evening at this restaurant in de Pijp area. Think of pickled herring, Dutch feta, homemade black pudding and Dutch wines. They even serve a Dutch Champagne. Every dish looks so pretty and was so well executed.

We had eight courses and it was quite an amazing dinner. My fave was the cabbage filled with mushrooms and Dutch feta in a cucumber green apple broth. The dish looks simple but had such beautiful flavors.

• Green beans, broad beans, smoked goat butter, seaweed and pistachio

• Tartelette w/ blackberries, crème pâtissière and almond

I loved every single dish, but the green beans was my fave. Loved the fresh crunchy veggies and the taste of the smoky butter. So insanely delicious.

There’s a new Japanese Pancake pop up shop in Amsterdam where they sell super fluffy Japanese pancakes. Swipe to see how these fluffy ones are made and to see more pics. 

This pop up is a taste of what will come soon: a Japanese arcade hall! Say what! I kid you not. They are working on a super cool Japanese arcade in Amsterdam West where you can play games, eat ramen and nibble on Japanese fluffy pancakes. What’s not to like? 🤷🏻‍♀️Since the owners can’t wait until they open @mollys.arena they’ve launched this Japanese fluffy pancake shop on the Jan Evertsenstraat in Amsterdam West. But hey you say, wasn’t this where Molly’s Pie used to be. Yup. That’s also theirs and those savory pies will back as soon as they open the arcade. 

I tried the unicorn pancake with marsmellow, pink and blue cream and sprinkles and the salted caramel with pecan nuts. I expected the unicorn one to be very very VERY sweet but it wasn’t even that sweet. But I still prefer the salted caramel one just because it’s more salty. And the pancakes were crazy fluffy. To quote Agnes from Despicable me: ‘It’s so fluffy I’m gonna die’. But seriously, the first time I had these Japanese pancakes was in Tokyo and these fluffy goodies made me feel like I was in Japan again. So they are very approved. savory eclair ✨ I love absolutely everything abo savory eclair ✨ I love absolutely everything about this dish. The cream of duck liver and white chocolate, the textures, sweet and a bit tangy pear chutney and those crunchy macadamia nuts. It’s just perfection and it tastes so insanely good. Bonus: it’s also super sexy looking! 

I had this stunning dish last night at @lecoeurrestaurant . Existing location, same name, but besides that everything is new. The owners, the staff, the menu and the wine collection. Oh and they tweaked the interior. And Le Coeur embodies everything I love about a good restaurant. The service is superb, the atmosphere is cozy and exciting, the food is mind blowing and their wines are amazing. Owner @rickswinkels and his team did a fabulous job. Foer is the Dutch word for foraging. That is what Foer is the Dutch word for foraging. That is what chef @steven_broere of @restaurantfoer does to collect the herbs and other greens for his menu and also to inspire himself. Together with maître @jur_pm they run this super stylish and cool restaurant in Amsterdam East. The restaurant is located in a former folk coffee house dated from 1902 but they remodeled it and transformed it into a very amazing spot. My fave place is at the counter where you can watch the chef and his team while they create the most exquisite and photogenic dishes. I always feel so welcome and at ease at this place. Maître Jurre and chef Steven are always so welcoming and fun to chat with. Besides the amazing food (we had 8,5 dishes and above you can see a few dishes.
