How cute are these knotted buns? I saw these on th How cute are these knotted buns? I saw these on the gram and just had to try and make them. They are called huā juan in Chinese. Traditionally you eat these either with boiled scallops wrapped inside or just plain and without a dipping sauce. But my boyfriend said he wanted a sauce to dip these buns in, so I made a hoisin dipping sauce. It’s up to you whether you make a sauce of not. Have you ever had these braided steamed buns before?
 
RECIPE
Don’t forget to tag me if you make these babies. I am very excited to see your creations.
 
For the dough:
- 160 grams of warm water
- 5 grams of sugar
- 3 grams of instant yeast
- 300 grams of flour
- 2 tablespoons of oil
 
The dipping sauce (optional)
- 2 tablespoons of hoisin sauce
- 2 teaspoons of mirin
- 1 teaspoon of tahini
- 1 teaspoon of sesame oil
- 1 teaspoon of rice vinegar
 
Also needed:
- Rolling pin
- Steaming basket
- Baking sheet (cut into 7 pieces of 6x6 cm squares)
 
Instructions:
1.Mix sugar, water and yeast in a bowl and leave until it starts to foam.
2.Add flour. Mix and knead until you have a smooth dough. Cover and leave to rest for an hour.
3.Divide the dough into 7 pieces.
4.Shape each piece into a ball and flatten by pressing down. Roll out each piece into a dough sheet with a thickness of 2 mm. Spread some oil on the surface of the dough (use a brush or some paper towel) and sprinkle some flour over the dough. 
5.Roll the dough into a roll.
6. Use a large knife to cut the dough lengthwise and leave about 2 cm attached.
7.Braid the two dough ‘legs’ and roll the dough into a ball starting from the attached side. Flatten the end and tuck it under the bun.
8.Place the buns on the paper squares and steam for 10 minutes.
You can eat the buns just like this or you can dip them in the hoisin dip sauce.
 
To make the dipping sauce, mix together all the ingredients.

Homemade kimchi dumplings! I had so much making th Homemade kimchi dumplings! I had so much making the dumpling dough and using my own made up filling. After folding the dumplings I baked them and steamed them so they were both crunchy and fluffy at the same time.
 
Below is the recipe for these tasty dumplings. If you decide to make these dumplings, please tag me because I am pretty excited to see what you made.
 
Ingredients for 12 dumplings 🥟🥟
Dumpling dough
- 100 grams of flour + extra for dusting
- 50 grams of water
 
Kimchi filling:
- 70 grams of kimchi (finely chopped)
- 50 grams of minced meat
- 1 teaspoon of mirin
- 1 teaspoon of sesame oil
- 1 teaspoon of rice vinegar
- 2 teaspoons of soy sauce
- 1 teaspoon of cornstarch
- Half an egg
 
Instructions:
1. Mix the flour and dough in a bowl and knead it until you have a smooth dough. Cover and let it rest for an hour.
2. Mix all the ingredients for the filling in a bowl.
3. Shape the dough into a cylinder and cut into 12 pieces. Dust with flour.
4. Grab one dough piece and push it down with your hand to form a disc. Use the rolling pin to flatten more (2mm thick)
5. Spoon two teaspoons of filling in the middle of the dough disc and fold the dumpling the way want. I used the pinch braid technique.
6. Repeat steps 4 and 5 for the rest of the dough 
7. Heat oil in a baking pan and carefully place the dumplings bottom down in the hot oil. Lower the heat to medium/hot and bake the dumplings (please don’t move them around!) until they are golden brown.
8. Pour 100 ml of water in between de dumplings and cover with a lid.
9. Steam for 15-20 minutes until the dumplings are cooked.
10. Drizzle your kimchi dumplings with chili oil, chopped scallions, fresh coriander, Eagle sauce, soy sauce, hot sauce or whatever sauce or herb you prefer. Pizza galore. @norulesamsterdam launched their tak Pizza galore. @norulesamsterdam launched their takeaway pizzas and they asked me to test their tuna toppings and their ‘nduja pizza. Chef Manolo demonstrated how he makes the pizzas. Showing me some wicked pizza chef moves. The pizzas were lip smacking good. That heavenly crust 😍 So fluffy and I loved both toppings. We also had their fried chicken. Which had an amazing flavor and were so super crispy. And to top it all off, we had the red velvet cake. Def would order these dishes again. Miele is launching a new reunion box for at home where you get to dine with extraordinary dishes of Michelin star chefs just one more time. Chef Peter Gast closed his restaurant a while ago and now runs the successful Michelin starred restaurant @graphiteamsterdam in Amsterdam. This month he created a box with his famous dishes he doesn’t serve at his new restaurant. Sommelier Jacqueline put together some amazing wines from @debruijnwijnkopers1772 that go well with these dishes. Have you ever tried Chinese hot pot? If yes, do yo Have you ever tried Chinese hot pot? If yes, do you like it, love it or hate it? I absolutely love love love Chinese fondue. So hot pot delivery is the perfect quarantine food for me. It makes dining at home just a tad bit more fun. @hotandhot.nl asked me to test their hot pot at home and I loved everything about it. The fact that the driver called me 30 minutes in advance and showed up three minutes early. I dunno bout you but I’m that kind of person that sits in front of the window waiting for my food delivery 😂 #sohangry #sohungry. All the food was boxed in sturdy boxes and since everything was already cut and slices I could just pop it onto some plates, pour the broths in the hot pot cooker and start eating! I had two broths: the fermented cabbage and a red chili one. And they were both to die for. So much depth in flavor and so warming. We had so much fun dipping the hot pot dishes in the tasty broth. Especially the wagyu and the silken smooth tongue. We also had lots of veggies and yummie dip sauces. I can’t wait to order hot pot again. Want to throw a hot pot party at home? It’s FriYAY! I had quite a busy week and I can’t wait for my friends to arrive so we can kick back together and enjoy this platter I made for us the share. Of course I had to steal a snack because hey that’s the privilege of being the host and chef right? The new snack brand @Mitsubasnacks asked me which of their flavors I like most and with what kind of snacks I would combine them. I picked the Thai chilli crispies and the sriracha peanut crunch and combined them with Vietnamese fresh spring rolls with a hoisin sriracha peanut dip. How cute are the ones with strawberries? And I also made Thai larb moe lettuce cups with Thai chilies. The Mitsuba snacks are like love at first bite. I love how crispy these new bites are. It must be the Asian in me, but textures are just as important for me as the flavor. And these snacks have both this amazing snap when you bite into it as well as exciting Asian flavors to spice up your snack platter . Oh and all of the snacks are vegetarian and they also have two vegan options (Wasabi Crunchy Peas & Salted Crunchy Edamame). So also great to share with your vega(n) friends. Not only was this the prettiest dish but I absolutely loved the exciting layered flavors. The soft curd, the amazing vinaigrette of sichuan peppers, East Indian Cherry filled with a super flavorful jelly (it almost tasted like caramel), cucumber and tiny roasted cucumber. It’s actually almost impossible to pick a favorite. Each and every single dish was extraordinary and so original. We had eight courses and sometimes dinners with multi courses tend to start of amazing but get dull when it hits the main course but this was not the case at restaurant Coulisse. The menu was super thrilling from start all the way to the end. Making the fairly new place one of my new favorite restaurants. Salsa macha is my new addiction. Last week at @ros Salsa macha is my new addiction. Last week at @rosario.amsterdam I ate this highly addictive salsa for the first time. Or at least it was the first time I noticed eating it. This sauce is just packed with umami and has so many amazing flavor layers. Chef and owner Nina combined the salsa macha with roasted cauliflower and fluffy sweet potatoes and it was just so comforting. We tried all the tacos on the menu and this vegetarian one was my fave. It even beat the cochinita pibil which was also amazing. Succulent, rich in flavor and also a prove that less is more when it comes to a good taco. Third fave was the fish taco…OMG that super crispy crust!! Good thing she changes her menu often, that way I have an excuse to keep going back for more! What’s your fave taco?

The colourful interior kind of reminds me of the Peach Pit (you know that place from BH90210). Besides a lean and mean tepache slush they serve a wicked Jalisco ceviche, awesome tostadas and amazing tacos. I loved the leche de tigre with calamansi and the homemade beetroot tostadas with fried prawn head. The Yucatan tinga de pollo was just packed with flavour and the Oaxaca barbacoa was both succulent and crispy at the same time 🤤 I also like how chef Eliraz isn’t afraid to use spice in his dishes. Besides the Atomic Zombie (beef patty, bacon jam, crispy bacon, American cheese, Carolina bbq sauce, chipotle ketchup, diced pickled onion and toasted bun), we also had the Patty Melt (beef patty, American cheese, grilled onions, burger sauce, buttered toasted brioche bread and gravy dip, Tempeh Tacos, Birris de Res tacis and loaded kamikaze fries. I loved the sweet and saltyness and the crunchiness of the patty melt. But I was blown away by the comforting combo of the Atomic Zombie. No particular fave though.
