They only have one ramen on their menu: a bowl of homemade flat and thick noodles with teriyaki garlic, tempura cauliflower, burnt leek oil, fried onions, pickled radish, marinated tomato, arugula and sweet corn. It was very tasty and so comforting.

Chef Taka is back with his tasty ramen! 🍜🍜🍜

A few years ago the Japanese chef had a ramen pop up on the 4th floor of Asian supermarket @dunyongamsterdam. He left this pop up to help set up ramen shop Betsubara in Amsterdam West. The last time I spoke with the ramen chef he told me he went back to Japan, but this year he came back to the Netherlands and he is serving steaming bowls of deliciousness in the place where he started: Dun Yong Kitchen. The ramen shop has had a facelift and looks more like a restaurant now. With an open kitchen and a counter where ramen lovers can sit and slurp their noodz. For those who love to eat ramen at a table, they also have tables to sit at. We had the tan tan men and the shoyu ramen. The broth was super flavorful and had so much depth. The noodles were nice and chewy. And I fancy that instead of using minced meat for the tan tan men, they used thinly sliced pork belly. The pork was so succulent and yummy. Loved it! The only thing that could use some improvement was my egg. It was very well done instead of gooey. Other than that, I am happy Taka is back and will go back for some more ramen!

For me one of the most intriguing cuisines at the For me one of the most intriguing cuisines at the moment is Nikkei, the kitchen which brings Peruvian and Japanese flavors together. When the Japanese emigrated to Peru they introduced ingredients like soy sauce, ponzu and mirin and showed Peruvians what it meant if you marinate fish just briefly instead of overnight and if you slice fish thinner instead of chunks. One of the most well-known Nikke dishes is tiradito. And what better place to eat this and other tasty Nikkei dishes than @nazka_amsterdam? Last week I got a taste of some of their existing and a new ones. Their new chef @kooshkothari even added a touch of India, the country where he is originally from. Chef Kothari moved to Peru at an early age and grew familiar with the Peruvian language, culture and food. He went to Cordon Blue culinary school in Lima and worked at restaurant Central. Yup the famous one run by Virgilio Martinez which you’ve seen on Netflix’ Chef’s Table and is the number two restaurant on the prestigious World’s 50 Best Restaurants list. After that he worked at Kjolle with best female chef 2021 Pia Leon and worked as sous-chef at Merito, one of the new and most promising Peruvian restaurants. He moved to Amsterdam to start his adventure at Nazka and I can tell you you want to book a table here to treat yourself to the culinary treats of this talented chef and him team. @antonellonic_somm will be happy to pour you a matching wine from his amazing wine collection. Don’t you just love Vietnamese food? I am so happy we now have this cute place in Amsterdam where I can satisfy my cravings for Viet food. We had the banh mi with beef and pork belly and both were superb. I loved the fresh and crunchy baguette, the flavorful meat and the fresh veggies.

If you are voted ‘the best Italian restaurant 20 If you are voted ‘the best Italian restaurant 2022 of the Netherlands’ (Italië Magazine) and are in 30th place of the top 50 Italian restaurants in the world (Prosecco DOC) the expectations are very high. And @pianeta_terra_restaurant certainly lived up to them. What a cozy restaurant right in the center of Amsterdam. As soon as we set foot into the restaurant we were welcomed with a typical Italian hospitality. We felt so at home. When Fabio, Laura and Raul started this charming Italian restaurant in 2000 they wanted to work with local, mostly small and organic producers. Chef Fabio even became an ambassador of the Slow Food Chef’s Alliance Network pushing his ambition to cook with respect for our planet. Back then it was quite a challenge to find producers who could live up to those standards but they managed and 22 years later they still hold on to their believes and while doing that they serve amazing dishes that not only look fabulous but are also incredibly tasty. What I love about their food is that they put so much love and effort in it. Like the insanely delicious dish called ‘Winter ocean’ (2nd picture), Fabio told us that he went to the Northern market that morning to buy the oyster (Waddenoester) and while he tells us about his market trip his eyes sparkle. It’s obvious he loves what he does. Sommelier Laura surprised us with wines from small producers that paired so well with the flavors on our plates. We absolutely fell in love with this restaurant and the team behind it. Foodie heaven Chiang Mai was the start of our Thai Foodie heaven Chiang Mai was the start of our Thailand trip. I fell in love with this laidback city and its flavors. Northern Thai cuisine is one of my faves. I love laab and kao soi kai. We were so happy to be in this Northern city so we could sample the real flavors of these dishes. There are so many amazing eats in this city. From Michelin star rated fancy restaurants to street food vendors who have been recommended by Michelin to food markets. Everything is so flavorful and fresh.  Here are some random snaps from our eats and drinks. We ate so much more and I can’t wait to go back to Chiang Mai. We had such an awesome food fest @neni.netherlands We had such an awesome food fest @neni.netherlands. There were so many tasty dishes on the menu that we couldn’t choose. So we let chef @peledb decide for us. The result was a delicious feast which I will remember for a long time. My fave was the Summer sabich (first and second picture). That gooey egg and that explosive flavor…so good. Neni’s fluffy pita bread and creamy hummus are always a treat and I love their lamb dishes too. Oh and the sea bass….ok ok everything was quite amazeballs.

Last week I was invited to a press lunch at new ki Last week I was invited to a press lunch at new kid in town @nela.restaurant in the Zuidas in Amsterdam South. The place looks amazing and has such a cool vibe. Nela means pure and that’s exactly what chef Hari Shetty and Ori Geller want to achieve here, cooking on open fire using pure and honest ingredients. The food was amazing. My fave was the sea bass with watercress. And the most fun dish award goes to the tiramisu dressed up like a tin of caviar. Nela will be opening her doors in a few days. We’ve had a lot of kaiseki dinners in Japan, but it’s quite hard to find a good one in the Netherlands. It’s a traditional Japanese dinner that consists of several courses. The dishes are created with seasonal products and are little edible artworks. Some people compare it to French haute cuisine. Akira Oshima is the owner and chef of this Japanese restaurant. Chef Akira used to be the executive chef of restaurant Yamazato in Hotel Okura where he was awarded a Michelin star. We had the 8 course dinner, pictured are:

Recipe for Chinese crêpes with a twist. Have you Recipe for Chinese crêpes with a twist.

Have you ever eaten these delicious Jian Bings? They are thin egg pancakes filled with scallions, crispy lettuce, deep fried dough sheets and proteins (e.g. chicken, duck or tofu). I decided to make Jian Bing with a twist and used Emping Salted from @gotan_nl instead of deep-fried dough sheets. The result is a tasty snack that is very easy to make at home. And if you don’t feel like cooking, you can also just snack these salty crackers. They are so yummy and they are also vegan. Have you ever tried Go-Tan Emping Salted?

What you need:
* 300 gr flour
* 450 ml water
* 3 eggs
* 1 tsp salt
* 1 tsp white pepper
* 2 tbsp black sesame seeds
* 2 chicken breasts
* 3 scallions (cut thinly)
* A handful of fresh coriander
* 2 tsp hoisin sauce
* 6 leaves washed ice berg lettuce
* 1 bag Go-Tan Emping Salted
* Oil or butter for baking
* Half a cucumber (sliced thinly)
* 5 radishes (thinly sliced)
Preparation:
1. Heat oil or butter in a baking pan. Mix the flour, water, salt and white pepper in a bowl.
2. In a bowl, beat the eggs lightly.
3. Spoon batter in the baking pan and turn the pan around to form a thin crêpe. Spoon 2 tbsp egg in the middle of the batter and sprinkle some black sesame and scallions on top. Bake for two minutes, turn and bake for another 2 minutes. Go on until all the batter is finished.
4. Melt butter or oil in a baking pan and bake the chicken until golden brown (5 min per side). Let rest and cut into slices.
5. Place the crêpes with the egg side on a cutting board and top with the lettuce, chicken, cucumber, radishes, hoisin sauce, Emping Salted, sriracha sauce, peanuts and coriander.
6. Roll up the pancakes, cut into fingerfood size portions and serve with hoisin sauce and extra Emping Salted.

Michelin chef @basvankranen created an amazing menu using local produce from small organic farms and sustainable fishmongers. Cool detail: he and his team also visit a picking forest so now and then to pick (forgotten) herbs which they use in their stunning dishes. 

The best way to enjoy this unforgettable dinner is to just sit back and let yourself be surprised by what the chef and his team have created. Just to give you an idea of the products they use: they have Dutch wasabi and snails from the Netherlands. Also, they don’t use any dairy. Instead of bread and butter they serve bread and tasty lard. And the beurre blanc is made from poppy seeds. And I can tell you it was pretty amazing. Also very awesome: the ‘nduja made from rosehip. 

I also love what they did with the interior of the restaurant. It used to be more classic and it was called Bord’Eau. They’ve redecorated the restaurant and the result is a cozy and stylish atmosphere. The best spot: the love seats.

Last Monday I was invited by @visit_israel to attend a Israeli vegetarian cooking workshop @estherscookery. It was so inspiring to hear Esther, the owner of this cozy cooking studio, sharing her stories and love for this exciting and divers cuisine. We got to cook her tasty recipes, learned a lot and had loads of fun. I realized how much I have missed these kind of events and I am happy they are possible again. After all that hard work came the fun part: tasting all the amazing dishes. They were packed with flavor and made with so much love. I realize we just got to scratch the surface of what this cuisine has to offer. That’s why I have added going to Tel Aviv and Jerusalem on my wishlist. I can’t wait to really dive into their colorful food culture and to experience and taste more 😍😍😍

We had:
🌶 red curry rice bitterballen (deep fried balls) with a addictive homemade sweet ‘n sour dip made from dried shrimp
🥬🦆laab ped, an Isaan style salad with chopped duck, chili, fermented fish sauce, herbs and more yummyness.
🍜🐓🥥 khao soi kai: a steamy bowl of boiled and fried egg noodles in a tasty red curry coconut soup topped with crispy fried chicken, coriander, shalot and more.

My fave was the laab. It was so nice and spicy and had such a funky tanginess to it I couldn’t stop eating it. But everything was just amazing. The crispy balls, the super tasty khao soi kai and let’s not forget the delicious and refreshing homemade lemonades. Do try the pandan lemongrass one. It’s superb.

Can’t believe how tasty these buns turned out. S Can’t believe how tasty these buns turned out. So super fluffy with a tasty filling and a yummy broth inside. And I love how crunchy the bottom was. 

Here’s the recipe for 8 baos (see also link in bio):
 
Ingredients for the filling
-175ml chicken stock
-0.5 tbsp agar agar powder
-125 grams of pork mince
-1 spring onion (finely chopped)
-2  shiitake (finely diced)
-0.5 garlic clove (finely chopped)
-1 cm piece of ginger (peeled and finely chopped)
-Pinch of ground white pepper
-0.5 tsp sesame oil
-Pinch of salt
-0.5 tbsp oyster sauce
-0.5 tbsp soy sauce
-0.5 tsp Shaoxing rice wine
 
Ingredients for the dough
-250 grams of all-purpose flour
-0.5 tbsp of neutral oil
-Pinch of salt
-3.5 grams of instant dried yeast
-7 grams of baking powder
-20 grams of sugar
-150 ml of water
 
How to make the buns:
1.Make the jelly by mixing the stock and agar agar in a pan. Leave for 15 min, bring to a boil (don’t stir), lower the heat and boil for a few minutes. Stir well, leave to cool in the fridge until it sets (about 1 hour).
2.Mix the rest of the ingredients for the filling. Chill until you need it.
3.Check if the jelly is firm. If so, dice it and mix it through the filling.
4.Put all the dry ingredients in a stand mixer. Use the dough hook to mix. First slowly, add the water and oil and turn up the speed. Mix for 2 min, roll the dough into a ball and grease the dough with some oil. Cover and prove for 1,5 hour.
5.When the dough has doubled in size, shape into a long cylinder. Use a bench scrapper to cut it into 8 pieces and roll into 8 balls. Flatten into 3mm discs. 
6.Flatten your left hand and put a dough disc on it, spoon 1 heaped tsp of filling in the middle of the dough disc. Use your right hand to grab and pinch the edges of the dough together. Make pleads all around the bun until there’s no more dough left. Shape the rest of the dough into buns. Cover with and rest for 30 min.
7.Heat 5 tbsp of neutral oil in a frying pan. When the oil is hot lower 4 buns into it. Fry for 3 minutes and add 5 tbsp of water and cover. Steam for 6 minutes.
8.Serve with black vinegar

@_masmais is the only taqueria in Amsterdam where they make fresh tortillas using fresh corn. So, of course I had to go and see for myself. 

I spent one after noon with co-owner Mike van Kruchten. He showed me how they use a real Mexican molino to grind the boiled corn. After grinding they knead the dough and use the Mexican tortilla machine to shape the masa into little pancakes. Like a real tortilla king he taught me how to properly toast the pancakes on the plancha so they puff up. In Mexico this is a sign for girls that they are ready to get married. And of course I got to try it too and of course I messed up 😂 

No teaching without tasting! They built a few tasty tacos out of the fresh tortillas for us to munch. And they were so so tasty!! I love how exciting their tacos taste 🤩
