From the moment we stepped through the doors, we were greeted with an embrace of warmth and impeccable service that set the tone for an unforgettable evening. As dinner concluded, the desire to linger was undeniable, leading us to uncover the hidden gem of their underground listening and cocktail bar—an enchanting way to extend a perfect night.

What truly elevated this experience was the stunning setting. The inviting ambiance, adorned with elegant wood accents, wrapped around us like a cozy hug, instantly making us feel at home. And then there was the food—oh my goodness, the food! Each dish crafted by the talented chef George Kataras and his incredible team was not just a feast for the eyes, but a symphony of flavors that left us craving more. One standout dish featured an array of broccoli textures, transforming an ordinary vegetable into an alluring masterpiece. If you can make broccoli that sexy, you’re undeniably a culinary wizard!

To complement this gastronomic delight, sommelier Mo curated wine pairings that elevated every bite, making each dish even more delectable. CUE is simply phenomenal. At one magical moment, we were invited to the chef’s counter, where we witnessed the heartbeat of the restaurant in action. The energy, creativity, and passion were incomparable. 

This experience was not just dinner; it was a celebration of flavors and sensations. Note to self: I absolutely must return soon!

Sisi, a talented chef from Cambodia, pours her heart into every dish, crafting the recipes she cherished from her childhood. I had the pleasure of savoring the kathiew, and let me tell you, it was a flavor explosion! The broth was a remarkable symphony of taste, simmered to perfection for a whopping eight hours. No wonder it had such delicacy and depth! The delightful addition of fresh chili and zesty lime juice gave each spoonful an invigorating kick that I couldn’t get enough of. I devoured the bowl in mere minutes and swear I could have comfortably polished off ten more!

And let’s not forget those homemade fish cakes, bursting with the freshness of aromatic herbs—they were absolutely irresistible! Of course, no visit to a cocktail bar is complete without a refreshing cocktail in hand.

What started as a pop up of the coolest and I think even the one and only sandwich shop focussed on wild game sandos is now a permanent shop! To celebrate this exciting fact, they had their grand re-opening at their shop on the Gerard Doustraat in De Pijp where you could savor all of their tasty sandwiches with different wild game toppings and also stock up on your wild game supply at home!

We had their famous deer rendang (🤯 so good!) and the wild goose carpaccio (also very very tasty)! So happy that they are here to stay and can’t wait to hop on over to their shop to have another sandwich.

Great news for fans of Ivan Ramen in NYC! The famous ramen chef who starred in Netflix’s Chef’s Table is back in the UK for a two month residency @thenedlondon in London city center!

On the menu are four new ramen Ivan and him team created especially for The Kaia:
🐽 Iberico pork collar tsukemen
🍀 Vegan truffled shoyu ramen
🦞 Lobster mazemen
🐔 Tori shoyu wonton men

I had the lobster mazemen and it blew my mind. Every bite made me want more and more. Ivan reminded us to mix mix mix! And so I did and the end result was a heavenly bowl of tasty chewy noodz with a rich and creamy sauce. On top big chunks of delicious lobster. I am seriously thinking of flying back to London to just have another bowl or ramen. The four limited ramen are on the menu for only two months, so make sure you don’t miss @ramenjunkie special ramen.

@copainamsterdam just opened near the NDSM in Amsterdam Noord. The new restaurant is located in an industrial building and has a minimalistic, cool and creative interior. On the menu: creative veggie forward dishes. My fave dish was the halibut with a sauerkraut sauce. They have an extensive à la carte menu but you can also order the chef’s tasting menu. And if Dry January is your thing or you’re just drinking alcohol, they have a very tasty juice pairing. Owner Frederieke Bloem does ‘the front’ and chef Jesse Cameron is in charge of the kitchen staff. Chef Cameron used to work at Choux and is now showing his skills at this new and exciting place.

This cozy and elegant restaurant is located at the iconic and monumental Willemspoort (also known as the Haarlemmerpoort). @dewillem.amsterdam is a great spot for an evening of wining and dining. 

@jefdechef and his team serve French dishes with a Japanese twist in a vibrant and exciting atmosphere. I loved the vibe, food, wine and service so much that time flew by and I can’t wait to go back!

I really enjoyed everything, but I was blown away by the Steak Rossini. I could eat this dish all day, every day!

Did you know you can also swing by their cafe for some drinks at the bar and some proper bar snacks? They also do lunch, so it’s a place where you can hang out every day of the week from noon till late. 

We ate:
- Dumplings of rabbit stew carbonara
- Quail egg balls (a famous dish from Groningen, a city in the north of the Netherlands) with garam masala, picked red onion, vadouvan mayonaise and caviar
- Japanese scallops with garum butter sauce and shiitake xo
- Redfish marinated in Szechuan pepper from the plancha, artichoke and homemade xo sauce, chicken liver and a sauce made from the fish bones
- Bulgur salad, smoked eel, cream of eggplant, sesame, fennel salad and dashi ponzu
- Steak Rossini: a crunchy slice of brioche topped with steak tartare, duxelles, foie gras, chives and a Madeira gravy
- Ray wing, smoked mussels, ratatouille, nduja, selery and a mussels sake sauce
- Pork cheek, pangrattato, polenta and broccoli
- Choux pastry filled with condensed milk ice cream with a miso caramel
- Semolina with pickled plum, fig leaf, blood orange, umeboshi, elderflower and coconut ice cream

These tacos were so brain melting good that I came back for more the next day. I am talking about the scrumptious tostadas and tacos at the new pop up taqueria @cosmotacos.ams by Mexican chef @elomarsanchezlopez Firstly let’s talk about how funky and cool this place looks for a pop up. I have been to pop ups where they didn’t even bother to make the place look nice because ‘it’s just for a few months’. But that’s not the case for this vibing taco spot. I love the branded light box outside and the colorful details inside. I kept reminding myself it’s here temporarily, so make the most of it. And so I did. The first day we ordered the tostadas with mushroom Tinga, tacos albóndiga de camarón with cheese crust and chipotle cream (the shrimp balls were so insanely juicy!) on homemade wheat flour tortillas and tacos with beef tongue (lengua) and salsa tomatillo on corn flour tortillas. The next day I came back for chef Omar’s mother’s special taco and the cauliflower taco. Everything was so good and I can’t wait to go back for more tacos!

If you are looking for a legit date night spot, @r21_amsterdam is where you should go. This restaurant serves well executed dishes in a stylish setting. Chef and owner Orlando David goes above and beyond to create the most exciting dishes using a lot of different techniques like cooking in hay, pickling and roasting in salt crust. The name of the restaurant reflects the 21 years of experience he gained before he opened his own charming restaurant where everything comes together. Besides the amazing dishes, we also enjoyed the ambiance and the excellent paired wines. So, if you’re looking for a great restaurant to sit back and relax and enjoy the food, wine and company, this is where you should go.
 
We ate:
🍞Beurre noisette whipped butter with bread.
🌶️Crisp of cauliflower and sriracha with a piccalilli foam.
🐟Sea bass ceviche, popped corn, cream of algae and mint, pickled pepper, burnt Cevennes onion and oil infused with pine branches.
🥚Steak tartare with smoked mayonnaise, 63 degrees egg yolk and sourdough crostini.
🍀Beetroot roasted in salt crust, yellow beetroot roasted in miso, pickled Chioggia beetroot, gel of Cabernet Sauvignon vinegar, green herbs vinaigrette and a sorbet of beetroot and tonka beans.
🍆Wolffish wrapped in eggplant, mousse of eggplant, tiny artichoke with basil cream and a fish sauce with herring eggs and chives.
🍊Duck breast with an orange glaze, chicory from the BBQ, parsnip cream, pickled elderflower capers and a jus of umebushi.
🍏Dessert: cheesecake cream, Granny Smith tarte tatin, hazelnut crumble, buttermilk sorbet and an apple and fig leaf vinaigrette.

Ramen Nikkou Rotterdam - The Netherlands 🇳🇱🇳🇱

Koji Nishikawa ramen shop was considered the best ramen shop in Shiga Prefecture (he ranked number 1 for ten years in a row on Tabelog for Shiga Prefecture). He also won several awards in Japan. He moved to the Netherlands with his wife and opened @ramennikkou in Delft (a small and cute town in the Netherlands) in 2018. The ramen shop with a very authentic feel didn’t go unnoticed by ramen lovers and soon people were queuing up to get a taste of his flavorful homemade toripaitan and noodz. In 2021 he opened a second location in Delfst specialized in tonkotsu. And now ramen fans can also enjoy chef Koji’s ramen in Rotterdam. Ramen Nikkou Rotterdam is located inside the very cool food court @stationbergweg . You can choose from a vege paitan, tan tan men, toripaitan and shoyu ramen. When we arrived for lunch the tasty broth had been boiling for 7 hours already to create a flavorful broth with a rich taste. If you’re in Rotterdam, make sure to check out @ramennikkou.rotterdam !

I discovered listening bars when I was traveling t I discovered listening bars when I was traveling through Japan. The interior was always on point, the vibe always extremely chill and the bar tenders always more drunk then the guests 🤣 My boyfriend and I loved hanging at these bars while listening to vinyl and sipping on some of the best cocktails in Tokyo. I am so thrilled that these music forward bars have now found their way into the Amsterdam bar scene. @cue_amsterdam is a new Japanese inspired listening bar on the Utrechtsestraat from chef @deonlygeorgie_ and sommelier @mohamedaous from Michelin star restaurant Vanderveen (now closed) and the owners of restaurant Alba. The vibe, slick interior, superb cocktails, crazy good food (mostly bar bites) …everything is so well executed. Since we had dinner reservations somewhere else we only had time for one snack. We ordered the chicken & shrimp. They removed the bone from the part just above the chicken wing and stuffed it with minced chicken and shrimp. Steamed the whole thing, glazed it with a shrimp broth and finished it on the hibachi (Japanese grill). This was so brain melting good that I could eat a whole bucket of these. The negroni I had with it (with homemade vermouth blend & Tenqueray gin) was so freakin’ delicious that I still dream of it. CUE the restaurant is still under construction and will open somewhere in December and will be located above the listening bar. Something to look forward to!

As you all probably have noticed, I love ramen. But sometimes I got kind of bored with the same old miso ramen and tonkotsu ramen. That’s why I love the niboshi ramen @ramen_fujitora. Niboshi are small dried fish and they are used in the broth together with chicken and seabura (pork back fat). The steamy bowl comes homemade noodles, pork essence oil and toppings. The broth is so flavorful and has this delicious smokiness to it. The char siu is so delicate and thin that it compliments the lightness of the broth. We also ordered the shoyu ramen. Also a delicious bowl of ramen. But I prefer the complex flavors of the niboshi.

Sneak peak at the new sushi omakase @tewatashi.ams in De Pijp.

Today is the grand opening if this elegant sushi restaurant, but yesterday I got a taste of their menu. Tewatashi means giving something from one hand to another hand. Like a gift. The nigiris chef Yuji handed to me were a real treat! I could receive gifts like that all day and every day! Chef Yuji is from Japan and has years of experience in (high end) sushi (omakase) restaurants in Japan and London. He specializes in sushi that was created in the Edo period. We started with a few delicious bites. Grilled aubergine purée with burrata, oyster mushroom yakitori, soft steamed chicken with spinach and a sesame dressing and dashi-maki tamago (sweet Japanese omelet) with seaweed and ankake sauce. After that we were treated to five different sushi: otoro nigiri, nigiri from hamachi cooked in hay, 50 degrees tiger prawn nigiri and a temaki negi toro. Like most omakases we got a tasty miso soup to help the digestion. As a dessert we were handed a mochi with roasted soy bean powder (kinako). When we left they presented us a gift. It’s a custom in Japan to bring home a sweet sushi for your family at home who didn’t get to enjoy the sushi omakase. Yuki was very happy with the gift. ☺️ Tewatashi Sushi is an amazing experience that is a must try if you like sushi omakase. I really like the intimate and sophisticated setting. It feels like Japan! And the food is amazing! They have room for 7 people at the counter and 4-5 people at the two tables. So also good to enjoy with friends. You can choose from three omakases ranging from casual to refined (for special occasions). They are pretty fully booked, so make sure to book your seats or table.

I visited @roux.amsterdam a while ago and was blown away by the fantastic vibe, incredible food and top notch service. You’ll find this cozy restaurant right in the heart of the Jordan area. My fave spot is at the kitchen bar where you can peek inside where the magic happens; the kitchen. Don’t forget to order the langoustine with Lardo di Colonnata and eel foam because it’s going to blow your mind!

There’s a new and exciting pop up in town! Chef @arturoquintero_d is presenting a special menu at restaurant @brasseriegf these coming two months. Chef Dalhuisen has quite an impressive culinary resume. He worked at various Michelin star restaurants (De Leest**, The White Room* and Voltaire*) and previously popped up at restaurant Daalder*. 

We started the dinner with three epic bites from the chef followed by five amazing dishes. We had king crab with young tomatoes in a green tomato broth, scallops, duck liver and Sanbaizu, halibut with green curry and eel and pigeon from the bbq (so silky smooth) with black garlic and green herbs and a peachy dessert. Acidity and excitement are two things that chef Dalhuisen loves to use acidity in his cooking and to create exciting flavors. The result was a dinner that I won’t forget for sure. And the lovely sommelier Isabeau helped up with some amazing pairing wines. We had such a great evening enjoying the delicious food, great wines and fantastic service. The pop up ends next month, so be sure to book a table if you want to experience it!
