Easter specials and Spring goodies 🐣🐑🌱🌿 at this week’s @boxsociaal takeaway box tour. This awesome place on the Plantage Middenlaan in Amsterdam East is doing a box on tour and this week it is all about Easter and Spring.

All the dishes we nearly ready to eat. So all we had to do was reheating them. So very little effort, but lots of eating 😊

We started with a tasty Spring vegetable broth with wild garlic pesto and polenta croutons. After that we munched on a salad where shoots and roots and red beets (red beet and ricotta hummus!!) starred (second picture)This crunchy salad was topped with their homemade guanciale. We also had pea, parsley & mint fritters with horseradish aioli, lamb sausage Scotch egg (first picture), lemon & herb lamb shank with new potatoes, leafy greens, young carrots and salsa verde as dessert the menu offered roasted rhubarb, cashew and ginger crumble with vanilla labneh. And for the morning after we also had the hot cross buns (third picture). 

I really loved this takeaway menu. Everything was just so delicious and fresh. Great flavors and so well balanced. Every dish was impeccable but my fave were the Scotch Eggs. The meat was so sweet and herby and the crust just perfect.

Good to know: Box Sociaal focusses on sustainability and no waste. They use the rhubarb leaves for the salad and they use reusable containers by @deliverzeronl.

I also recommend you visit them for their takeaway sandwiches (with brisket!!) and burgers. And in two weeks they will be doing a traditional Burmese feast. Alex, who co-founded Box Social has Burmese roots and will be cooking food that he and his relatives love and know so well. All profits will be donated to those who are fighting for their freedom in Myanmar. So keep an eye out on this takeaway menu!

As you can imagine I am pretty excited for the launch 😍 So for all the dishes you see here: the camera ate first but after that Sam finished the plates. Ok ok I did leave some for the rest of the team. But I most admit it was hard to share these dishes since they were so lip smacking good. Chef Eliraz already prepared all the components and packed them in separate bags. All you have to do is heat up the vegan al pastor, add the gravy and start building your taco. Did I say vegan? Yup I did cause it’s a plant-based version of the traditional al pastor, the @holy_vegan_pastor. So perfect if you don’t eat meat or trying to cut down on it. The chef packed a lot of flavor in each and every one of the components (pumpkin cream, pickled fermented 🍍🍍 and pickled red cabbage) I learned I really had to fry the al pastor so it would get some crispy umami bits. This recipe makes 5 fruit sandos and you’ll need:
-  4-5 🍓, 1 🥝and 5 🫐
- 10 slices of 🥛🍞
- 250 ml heavy cream
- 25 gram sugar
- tiny bit of 🍫paste
 
You’ll also need:
- a whisk (or if you’re lazy a mixer)
- sharp knife
- 🐰 bunny shaped 🍪cutter
- toothpick
 
INSTRUCTIONS:
1.Use the cookie cutter to make 10 bunny shaped bread slices (don’t use the crust).

2.Beat the heavy cream with the sugar until you have a thick whipped cream.

3.Slice the strawberries and blueberries in half and slice the kiwi in six parts so you can show the pretty centers.

4.Decorate 5 slices of bunny bread slices and cover with a generous amount of whipped cream. Make sure to cover the gaps. Cover with the remaining bread slices.

5.Dip the point of a toothpick in chocolate paste and draw eyes and noses on the bunny faces.

They offer four Thai curries and one Indian curry and you can also order their awesome 🍣🍣. 
 
We had:
🦞🍛 whole St. Mary’s Bay lobster  curry with fenugreek, honey, ginger risottini and garlic naan bread. This curry was so packed with flavor. I loved how you could taste all the Indian spices but this taste the sweetness and deliciousness of the lobster. And the naan bread was so fluffy 😍.

🐂🍛 soy braised wagyu beef curry with kimchi, Asian veggies, coriander risottini and crispy pappadum. This curry was so insanely fresh and smooth. It has all the typical Thai flavors like lemon grass, coriander and coconut milk but it felt like the most luxurious curry ever. Loved the silky texture. And that braised wagyu made it extra interesting. 

🐟🍛 sea bass curry with edamame beans, fried eggplant, mandarin risottini and papadum. This curry had so many delicious flavor layers. Loved how the mandarin rice really elevated the sea bass and the curry.

Extras: mango chutney, pickles and fortune cookies! That chutney oh my gosh so good. Sweet and tangy and spicy. Yum!

Seriously you guys, if you like curries packed with flavor this Pop Up is a must try. It was so so good. I loved everything so much.

I was craving fluffy savory buns so I made these s I was craving fluffy savory buns so I made these steamed baos filled with crispy kale and plant-based minced meat. It’s Week Zonder Vlees (Meatless Week) in the Netherlands so I thought it would be nice to try to make a meat free snack. I used minced meat by @meatlessfarm. This new brand is offering plant-based goodies such as burgers, schnitzels, meatballs, nuggets and minced meat. Their philosophy: creating delicious plant-based products with the taste and texture of meat. I used the minced meat to make the filling. And I must say it did not disappoint at all. The minced meat was packed with flavor and had a nice bite. The filling was juicy and umami loaded. You can buy Meatless Farm at @crisp_nl, @gorillasapp.nl and @veganfresco. Recipe below.
Ingredients for the dough:
-  450g flour + extra
-  225g lukewarm water
-  22,5g sugar
-  30gr corn starch
-  Pinch of salt
-  4,5 g instant yeast
-  1 tsp baking soda
-  2 tbsp oil
Ingredients for the filling:
-  1 onion (chopped)
-  Half clove of garlic (minced)
-  250g Meatless Farm minced meat
-  100 g kale (chopped)
-  6 tbsp (vegetarian) oyster sauce
-  6 tbsp cold water
-  1,5 tsp corn starch
-  1 tbsp oil
Mix water, sugar and yeast and wait until it foams. Mix flour, starch, salt and baking soda and add the liquids. Mix, add oil and knead to a smooth dough. Wrap in cling foil and let rest at room temp for 1 hour.
Heat oil in a pan, add onion and garlic. Fry for a minute. Add the plant-based minced meat, kale and oyster sauce. Dissolve starch in water and add to pan. Mix everything very well and fry until flavorful and crispy.
Divide the dough in 21 pieces of 34 grams. Roll each piece in a boll, flatten and roll out to a disc (2 mm thick). Spoon in 4 tsp of filling. While holding the dough in your left hand you make pleads with your right thumb and index finger. Go on until you have a bun. Steam for 10 min and let rest 5 min. Enjoy! There’s a new plant based drive thru in town and There’s a new plant based drive thru in town and it has some very delicious burritos and nachos on it’s menu. @meatlessfarm is a new cool brand offering yummy things like burgers, meatballs, schnitzels and minced meat. Juicy, flavorful, with a pleasant bite and made with plant based ingredients. These goodies are packed with proteins, fibers and they are low in saturated fats. So they are tasty and good for you too. To create awareness for the Week Zonder Vlees (Meatless week) they’ve teamed up with @salsahop_official to create these lip smacking good burritos which you can pick up by driving through by car or bike through by bike (yup very Dutch). The Drive Thru is open now and I popped by for my burrito fix. I was so much fun. They even had a mariachi band and there was a line to get in. Good news travels fast. I really loved the food. It was a total ‘I can’t believe it’s not meat moment.’ I had both the vegan and vegetarian burritos and the nachos. Craving burritos or nachos? Pop by for a plant based takeout. You can find the fully Corona proof drive thru at the Kromhouthal in Amsterdam Noord. You only have a few days left to visit this unique concept since it will be open today until 8 pm, tomorrow from 11 am until 8 pm and this Saturday from 11 am until 5 pm. So be there or be square!

How cute are these knotted buns? I saw these on th How cute are these knotted buns? I saw these on the gram and just had to try and make them. They are called huā juan in Chinese. Traditionally you eat these either with boiled scallops wrapped inside or just plain and without a dipping sauce. But my boyfriend said he wanted a sauce to dip these buns in, so I made a hoisin dipping sauce. It’s up to you whether you make a sauce of not. Have you ever had these braided steamed buns before?
 
RECIPE
Don’t forget to tag me if you make these babies. I am very excited to see your creations.
 
For the dough:
- 160 grams of warm water
- 5 grams of sugar
- 3 grams of instant yeast
- 300 grams of flour
- 2 tablespoons of oil
 
The dipping sauce (optional)
- 2 tablespoons of hoisin sauce
- 2 teaspoons of mirin
- 1 teaspoon of tahini
- 1 teaspoon of sesame oil
- 1 teaspoon of rice vinegar
 
Also needed:
- Rolling pin
- Steaming basket
- Baking sheet (cut into 7 pieces of 6x6 cm squares)
 
Instructions:
1.Mix sugar, water and yeast in a bowl and leave until it starts to foam.
2.Add flour. Mix and knead until you have a smooth dough. Cover and leave to rest for an hour.
3.Divide the dough into 7 pieces.
4.Shape each piece into a ball and flatten by pressing down. Roll out each piece into a dough sheet with a thickness of 2 mm. Spread some oil on the surface of the dough (use a brush or some paper towel) and sprinkle some flour over the dough. 
5.Roll the dough into a roll.
6. Use a large knife to cut the dough lengthwise and leave about 2 cm attached.
7.Braid the two dough ‘legs’ and roll the dough into a ball starting from the attached side. Flatten the end and tuck it under the bun.
8.Place the buns on the paper squares and steam for 10 minutes.
You can eat the buns just like this or you can dip them in the hoisin dip sauce.
 
To make the dipping sauce, mix together all the ingredients.

Homemade kimchi dumplings! I had so much making th Homemade kimchi dumplings! I had so much making the dumpling dough and using my own made up filling. After folding the dumplings I baked them and steamed them so they were both crunchy and fluffy at the same time.
 
Below is the recipe for these tasty dumplings. If you decide to make these dumplings, please tag me because I am pretty excited to see what you made.
 
Ingredients for 12 dumplings 🥟🥟
Dumpling dough
- 100 grams of flour + extra for dusting
- 50 grams of water
 
Kimchi filling:
- 70 grams of kimchi (finely chopped)
- 50 grams of minced meat
- 1 teaspoon of mirin
- 1 teaspoon of sesame oil
- 1 teaspoon of rice vinegar
- 2 teaspoons of soy sauce
- 1 teaspoon of cornstarch
- Half an egg
 
Instructions:
1. Mix the flour and dough in a bowl and knead it until you have a smooth dough. Cover and let it rest for an hour.
2. Mix all the ingredients for the filling in a bowl.
3. Shape the dough into a cylinder and cut into 12 pieces. Dust with flour.
4. Grab one dough piece and push it down with your hand to form a disc. Use the rolling pin to flatten more (2mm thick)
5. Spoon two teaspoons of filling in the middle of the dough disc and fold the dumpling the way want. I used the pinch braid technique.
6. Repeat steps 4 and 5 for the rest of the dough 
7. Heat oil in a baking pan and carefully place the dumplings bottom down in the hot oil. Lower the heat to medium/hot and bake the dumplings (please don’t move them around!) until they are golden brown.
8. Pour 100 ml of water in between de dumplings and cover with a lid.
9. Steam for 15-20 minutes until the dumplings are cooked.
10. Drizzle your kimchi dumplings with chili oil, chopped scallions, fresh coriander, Eagle sauce, soy sauce, hot sauce or whatever sauce or herb you prefer. Chef Manolo demonstrated how he makes the pizzas. Showing me some wicked pizza chef moves. The pizzas were lip smacking good. That heavenly crust 😍 So fluffy and I loved both toppings. Miele is launching a new reunion box for at home where you get to dine with extraordinary dishes of Michelin star chefs just one more time. Chef Peter Gast closed his restaurant a while ago and now runs the successful Michelin starred restaurant @graphiteamsterdam in Amsterdam. This month he created a box with his famous dishes he doesn’t serve at his new restaurant. The chicken was so insanely crispy and that sauce was lipsmacking good. Unfortunately we’re going to have to miss this bad boy after but 4850 will open a deli from next week. So hot pot delivery is the perfect quarantine food for me. It makes dining at home just a tad bit more fun. @hotandhot.nl asked me to test their hot pot at home and I loved everything about it. The fact that the driver called me 30 minutes in advance and showed up three minutes early. I dunno bout you but I’m that kind of person that sits in front of the window waiting for my food delivery 😂 #sohangry #sohungry. All the food was boxed in sturdy boxes and since everything was already cut and slices I could just pop it onto some plates, pour the broths in the hot pot cooker and start eating! I had two broths: the fermented cabbage and a red chili one. And they were both to die for. So much depth in flavor and so warming. We had so much fun dipping the hot pot dishes in the tasty broth. Especially the wagyu and the silken smooth tongue. We also had lots of veggies and yummie dip sauces. I can’t wait to order hot pot again. Want to throw a hot pot party at home? We decided to collaborate for the campaign #backtotherestaurants in order to support the restaurants and to encourage people to dine at the restaurants again. Due to the new partial lockdown we had to put the campaign on hold. But this doesn’t mean we can’t support our fave restaurants. More and more restaurants (like De Compagnon) are offering a very cool take away and/or delivery so you can enjoy their dishes, wine, cocktails, snacks, etc at home. This way you don’t have to spend time planning, doing groceries, cooking and doing the dishes but you will have extra time to enjoy a tasty meal made by a real chef. And you support the restaurants.
